听屋焼肉(ポンドヤヤキニク)

グループ会社「D-Links株式会社」のコンサルティング事業がきっかけで生まれた、ハンバーグとステーキの店「听屋」。仲卸業者が持つ黒毛和牛を上手く買い集め、低価格で提供する。この仕組みを活用したブランドの新しい業態として、2017年12月に焼肉店「听屋焼肉」をオープンしました。

ステーキと焼肉ではそもそも肉の部位が異なるものの、「听屋」で培った信頼により、仕入れルートを確保。この強みを生かし、コストパフォーマンス性の高い焼肉を提供できるように。

さらに、ステーキは店内調理かつ焼き加減などが重要であるのに対し、焼肉は卓上調理が中心ゆえ、より効率的なオペレーション構築が可能。人材の確保が難しい時代において、魅力的なコンテンツと言えるでしょう。

ベースとなるコンセプトは、「オトナのスペシャルティ肉食堂」を標榜する「听屋」と軌を一に。ファミリー向けの食事処としてのみならず、ひとりでも気軽に入れる食堂として、また仲間とつまみながら飲む居酒屋として。専門店の領域に囚われない、自由で多様性のある使い方を提案します。とくに「ひとり焼肉」がトレンドワードとなるなど、おひとり様需要が増える中、今後発展するポテンシャルを秘めています。

さらに時代に沿わせたキーワードとして特筆すべきは「身体に優しい」こと。牛骨でだしをひき、タレは麹で旨みを引き出すなど、焼肉店では極めて珍しく無化調調理を徹底。食べ疲れのしない焼肉を目指します。

それに合わせて、ナチュールワインを豊富に取り揃えているのも特徴。「味の濃い焼肉を食べて、喉が渇いてビールを消費させる」という、これまでの焼肉店の常識をそっくり覆します。

第一号店となる立地は、学芸大学。競合店がひしめくこの街をあえて選んだのは、「住民はひとつの家庭に一軒、行きつけの焼肉屋がある」と言われるほど、一度気に入れば、長く親しまれる可能性を秘めているから。深夜3時までの営業も試み、新しい听屋としてのブランド力がさらに高まっていくこと請け合いです。

 

POUND-YA YAKINIKU

 

“POUND-YA HAMBURG & STEAK” was established by taking advantage of the management consulting expertise of the business group D-Links Inc. We proficiently buy special Japanese Black Wagyu beef from intermediate wholesalers and in turn we can offer reasonable prices to our customers. Using this new business structure, we opened a new Korean BBQ restaurant called “POUND-YA YAKINIKU” in December 2017.

Even though steak and yakiniku beef are from different parts of a cow, we are able to sustain our supply because of the trust we have built in our expanded “POUND-YA” brand. Because of our consistent supply we are able to serve high quality yakiniku at a low cost to our customers.

Furthermore, while professional cooking in a restaurant kitchen is essential for steak, yakiniku is often cooked by the customers at their table. The result is a simplified operation for the restaurant. This kind of efficient operation can be an attractive practice for restaurant management, as it is difficult to hire quality manpower nowadays.

The concept at POUND-YA YAKINIKU is serving healthy gourmet beef for adults. POUND-YA is more than just a restaurant for families. We would like to provide this place as a restaurant where you can feel free to come in alone or as a tavern to enjoy small plates with your friends. We do not want to stay in the boundaries of being strictly a yakiniku restaurant. We want to encourage our customers to feel diversity and freedom in thinking about how to dine here. The idea of “hitori yakiniku,” which means enjoying yakiniku alone, has become trendy recently and there is an increased demand for this kind of dining. We believe that this holds a potential for business development.

We want to be “Kind to Your Health.” This is a special phrase which we would like to specifically mention because it is timely and relevant to our methods. We do not use any chemical seasoning, which is extremely rare for yakiniku restaurants. We take the stock from the beef bone and extract the flavor with malts for the dip. We aim to serve light and healthy yakiniku for your body.

In addition, we serve a variety of natural wine which is a distinctive feature of this restaurant. A common industry strategy is to encourage customers to consume beer while having strong flavored beef. This thinking doesn’t suit our concept.

Our first restaurant is located near Gakugei University. There is a reason we chose this highly competitive area. It is said that every family in town has a favorite yakiniku restaurant here. So we considered the possibility that we could become one of the favorites, and once they decide we are their favorite, they will like us for a long time. The restaurant is open for business until 3:00 in the morning. We are confident that we can increase the brand strength of this new POUND-YA.
