Wine Loved by an Oboe Player.

 

社内全店のワインに関わる仕事を担う菅野 浩和さんは、もとオーボエ奏者。英才教育で3歳からピアノを始め、中学生で管弦楽部に入り、高校生からオーボエをめざし、やがてプロへ。オケでの演奏会やレッスン講師の仕事もし、もうこのまま音楽一筋に進む……と思いきや!

出会ってしまったのだ。ワインという蠱惑の世界に。

 

Hirokazu Kanno is in charge of the wine selection at all of the restaurants that this company owns. His original career was as an oboist. His family gave him the special chance to start practicing the piano when he was just three years old. He belonged to his middle school orchestra and in high school he chose the oboe. Later he became a professional oboe player. He was a member of an orchestra while at the same time, he taught the oboe. It was no wonder that he would have a career in music.
But! As fate would have it, he encountered the allurement of the wine world.

きっかけは、レストランでアルバイトをした時。「人生で初めてちゃんとしたワインを飲んで。こんな美味しい飲み物が世の中にあるのか!これがワインなんだ!と、感動したんです」

とりわけ「KENZO ESTATE あさつゆ」「ヴァインバック リースリング」。この2種のワインに熱烈な恋ごころを抱き、ひたすらにそれだけを売り続けた。そうしてやがて、言葉が完全に自分のものになった頃。もう1種類、もう1種類と増やし、広げていった。「完全に自分の中に咀嚼して飲み込んでからじゃないと、説得力がない。そう思ったんです」

それは、料理に対する説明も同じこと。「その料理を、自分なりにちゃんと飲み込めているか。主観がしっかりしているか。結局は主観でしかないと思うんです。自分がおすすめして、お客さまに微妙な顔をされる時もある。しかし主観がしっかりしていると、説得力があるんです」

真摯に目の前のものと向きあう姿勢、芯の強さ、探究心。それをひとつひとつ自分のものにしていくセンス。きっと彼は音楽にしても、同じように取り組んできたんだろうなと想像してしまう。

 

It happened when he worked part-time at a restaurant. “I tasted wine for the first time in my life and I was so impressed. I thought, ‘I have never known that such a delicious thing exists in the world! This is the wine!’”

He fell deeply in love with two kinds of wine named “KENZO ESTATE asatsuyu” and “Weinbach Riesling.” He was recommending and serving those two wines to customers all the time. When he fully understood those two lovely wines, he chose one more that he liked, and then another, and gradually he broadened his knowledge of the wine world. “I thought that I had to understand each wine completely before I could recommend it to customers.”

He has the same outlook in terms of food. “I need to comprehend each dish that I serve. I think it is important to have my own opinion about the dish so that I can recommend it in a persuasive way. Sometimes, customers don’t agree with me though.”

Mr. Kanno has a sincere attitude toward everything. He is tough, curious, and has a special ability to acquire new knowledge.

I can imagine that he was also working hard with music and committed to his goal.

「音楽をやっていてすごく良かったと思ったのは、テイスティングですね。オーボエをやっていた時、和音をとる(判断する)トレーニングをするんですが、そのおかげでワインの味も、和音のようにとるクセがついている。香りの明るさだったりを、トーンで嗅ぎ分けるんです」

常人には想像もつかない、芸術家ならではのメタな感性で研鑽を磨いたのち、この会社に入社。音楽漬けからワイン漬けの日々に切り替わり、まもなく「サッカパウ」のペアリングを担当するまでになった。

「まさかこんなに早く自分がペアリングをさせてもらえると思っていなかったんですが、いざやるとすごく難しくて。でも面白くて」まずは自分が提示したものを、スーパーバイザーの大越基裕が添削、それを月ごとに繰り返していく。「一年くらいになるんですが、最初は半分くらい取っ替えられてたんです。だけど月が経つにつれてできるようになってきて。「ペアリングの合格率、菅ちゃん毎月上がってきてるよね」言われたのは、ほんとうれしかったですね。

されど、ワイン。君の行く道は果てしなく遠い。「前を見たら絶望しそうになるけど、今はとりあえずできることからやっていくしかない。基礎的なところも忘れずに見直しつつ、学びつつ、今は自分の能力を磨き上げることが大事だと思ってます」

“My musical background is very useful for tasting wine. I used to train so that I could distinguish each chord of the oboe. I still have that habit and identifying a wine’s flavor is like discovering the tone of a musical chord.”

As an artist, he was devoting himself to his music studies beyond imagination, and then entered this company. His passion changed from music to wine. It didn’t take long for Mr. Kanno to be in charge of wine pairing at S’ACCAPAU.

“I didn’t expect that I would be ready for wine pairing so soon. It is very difficult, but interesting.” Motohiro Okoshi, the supervisor of wine pairing at S’ACCAPAU checks what Mr. Kanno choses each month. “It has been about one year since I started learning from Mr. Okoshi. In the beginning, he had to change almost half of all my wine selections. But I am improving little by little. I was very happy when Mr. Okoshi told me, ‘You are getting better every month.’”

However, the world of wine is very wide. There is still a long way to go. “I feel hopeless if I view the whole wine world at once, but trying to improve day by day is the only thing I can do. I will keep learning both basic and advanced level lessons. It is important to hone my skills.”
